I've been baking this single cookie recipe for a few years now, and it's one of my favorite ways to treat myself, without feeling like I have to share. And sometimes, being an adult means that you get to treat yourself to a late night cookie craving when that feeling strikes!

Ingredients
- Flour - All purpose flour is the main ingredient needed to make this single serve peanut butter cookie recipe.Â
- Brown sugar - Adds sweetness.
- Peanut butter - A must if you're going to make this single serving dessert!
- Salted butter - Be sure that the butter is very soft. If you have unsalted butter add a pinch of salt.
- Egg - Used to find the ingredients together.
- Vanilla extract - Vanilla enhances all the other flavors of the cookie.
- Baking soda - Adds texture to make the perfect cookie shape.
- White sugar - For sweetness.

How to Make a Single Serve Peanut Butter Cookie
Preheat the oven to 350 degrees. Add parchment paper to a small baking pan or cookie sheet.
Step One: Stir together all the ingredients except the white sugar.
Step Two: Form the cookie dough into a ball, and then roll in the white sugar. Place the cookie on the baking sheet.
Step Three: Put the pan in the oven and bake for 14-16 minutes or until the edges are golden.Â
Top Tip
Make sure not to overbake the cookie. You want the edges to be golden brown and crisp with a soft and chewy center.
Substitutions
- Peanut butter - You can use any type of peanut butter that you want for this single serve dessert. Creamy peanut butter or crunchy peanut butter work just fine.
Variations
- Add chocolate chips - It is easy to turn this into a peanut butter chocolate chip cookie.
- Natural sweetness - I haven't tested this with a liquid sweetener like honey or maple syrup but I do know that coconut sugar would work.
- Almond butter - You can make this simple treat for your sweet tooth using almond butter or other nut butter in place of the peanut butter.Â
- Add cocoa powder - Adding a little bit of cocoa powder in place of some of the flour turns these into peanut butter chocolate cookies! I would suggest replacing 2 teaspoons of the flour with cocoa powder.
