Where has this single-serving cookie been all my life? I've always made large batches of cookies and then would freeze them, but I admit there is nothing like a fresh warm baked cookie. This wonderful recipe has been a game-changer for me because it allows me to have one of my favorite cookies, whenever I want!
And since I'm a fan of warm cookies with crisp edges and a soft center, it's easy to see why this giant cookie for one is my choice. Not only that, but it's a super fun after-school snack to have waiting for the kids. Ingredients
- Salted butter - Make sure that it's softened prior to using. If you have unsalted butter just add a pinch of salt.
- Brown sugar - This adds sweetness to this single cookie recipe.
- Vanilla extract - Perfect for adding flavor.
- Egg - You need two teaspoons of egg for this recipe. I beat the egg white and egg yolk together and then measure it out.
- Flour - The main ingredient used to make cookie dough is all purpose flour.
- Rolled oats - Adds a nice texture and chew.
- Baking soda - This helps to give these cookies a bit of texture.

How to Make a Single Serve Oatmeal Cookie
Preheat the oven to 350 degrees. Add parchment paper to a small baking pan.
Step One: Stir all the ingredients together in a small bowl. As long as your butter is very soft it will mix easily. Add mix-ins if desired.
Step Two: Form into a ball shape with your hands. Don't flatten it.
Step Three: Place it on the prepared baking sheet. Put the pan in the oven and bake for 14-16 minutes or until the cookie is golden brown around the edges.
Step Four: Let cool for a few minutes. Enjoy!
Top Tip
If you're not a fan of big cookies, you could technically break apart the dough into two smaller cookie dough balls on the cookie sheet and have two sweet treats in one!
Substitutions
- Dark brown sugar - You can use dark or light brown sugar for this recipe. White sugar can work in a pinch but won't give the same flavor.
- Sweeteners - For a healthy dessert, swap the sugar out for a bit of maple sugar, granulated honey, coconut sugar, or a sugar-free sweetener. I'm not sure a liquid sweetener would work in this recipe.
Variations
- Nut butter - Adding peanut butter is a great way to give this cookie a fun peanut butter cookie flavor. Almond butter or cashew butter would be delicious, too. Try adding half a tablespoon.
- Chocolate chips - Who doesn't love the idea of making this recipe into oatmeal chocolate chip cookies? You could even use dark chocolate chips!
- Protein powder - A little bit of protein added to these single -serve oatmeal cookies is never a bad idea. You should be able to swap out a teaspoon of the flour for protein powder.
- Pumpkin pie spice - This is the perfect addition for a fall-flavored single serving oatmeal cookie.

All you need to make this chewy oatmeal cookie is a baking sheet or baking mat, a small mixing bowl, and a spoon.
Storage
Let's be real. You're only making one cookie here, so the likelihood of leftovers is slim. But, just in case you have some to store for later, simply add the leftover cookie to an airtight container or sealable bag and store it at room temperature.

This is the second time that this recipe came up on my feed. I was in the mood for a cookie and doubled the recipe for myself and my husband. Put 1/2 tbsp of peanut butter in it and used dark brown sugar. It was delicious! It was quick too! Definitely going to try this again!
